Health dieting menus (Soups, Stews & Salads)

Tom's Fireplug Chili

Ingredients for this low calorie, low fat recipe are:
1/2 pound of extra-lean ground beef (or ground turkey)
2 Tablespoons Chili Powder
1 Teaspoon of Cumin
1 Teaspoon of Minced Garlic
1 Small Diced Onion
1/2 cup of Chopped Bell Pepper (Your favorite color!)
1 Small Can of Tomato Paste
Salt, Pepper
Salsa (optional)

Brown beef with garlic, salt, pepper, onion and bell pepper. Add remaining ingredients. If chili starts to stick, add a bit of water.

Tin Top Stew

Ingredients for this low calorie, low fat recipe are:
6 ounces of extra-lean stew meat
3 fresh garden carrots peeled and cut into 1 inch rounds
4 fresh potatoes (small) peeled and quartered
1 teaspoon dried parsley
1 diced onion
5 beef bullion cubes
2 Tablespoons of cornstarch
Water
Salt, Pepper

Brown beef; pour 1 cup of water into pot. Add salt, pepper, onion and parsley. Add 3 more cups of water and carrots. Allow to cook for about 10 minutes, then add beef bullion cubes. Add more water if necessary so that water just covers stew ingredients.

When carrots are almost done, add potatoes and cook for an additional 10-15 minutes. Cook until potatoes are fork-tender, so that fork will hold up potato without falling apart.

Mix cornstarch with a bit of water, then add to stew. Stir until stew thickens.

Chicken Little Soup

An ultra easy soup for dieters created with canned foods.
Ingredients for this low calorie, low fat recipe are:
1 can of Campbell's Chicken Noodle Soup - do not add water
1 cup of mixed vegetables

Combine ingredients in sauce pan, stirring until smooth and warm.

Cucumber Salad

Mix the following ingredients for this low calorie, low fat recipe:
1 tiny shredded peeled and seeded cucumber
1 peeled and seeded small shredded apple
1 Teaspoon of Golden Raisins
1 container of sugar free, fat free vanilla yogurt
